Guests begin with a guided walk through the lush Ital regenerative gardens where many of the herbs, vegetables, fruits, edible flowers, medicinal plants, and specialty ingredients used throughout the meal are grown. During the experience, guests learn about the farm’s philosophy, seasonal harvesting, regenerative agriculture practices, and the couple’s passion for locally sourced ingredients and artisanal Jamaican food culture.

The dining experience itself is carefully curated around the seasonal bounty of the farm and local small craft producers. Multi-course tasting menus often feature 7–8 beautifully presented vegetarian dishes designed to make guests “fall in love with their food” through flavour, creativity, presentation, and storytelling. Menus constantly evolve depending on the harvest and may include handmade breads, gourmet greens, wood-fired pizzas, seasonal soups, handmade pasta, plant-based specialties, tropical palate cleansers, fresh juices, and decadent desserts inspired by Jamaican ingredients and global culinary influences.

The atmosphere at Stush in the Bush is peaceful, artistic, rustic, and deeply connected to nature. Dining often takes place al fresco among the hills and gardens of the farm, creating an experience that feels both immersive and highly personal. Reservations are required, and many guests consider the experience more comparable to a private culinary tour or destination dining experience rather than simply going out to dinner.
